Terroir: Alluvial soils rich in minerals
Vinifications: Hand harvest from mid-September until mid-October. The stalk is taken
off and the grapes are then crushed and led into stainless steel tanks, The crushed
grapes undergo a cold pre-fermentation maceration (at least 7 °C) of at least 1 day.
This is followed by cold pressing and static decantation. Alcoholic fermentation takes
place at 14°C and goes on after bottling.
Elevage: To complete the making process, the bottles are kept in a dark place at a
controlled temperature. During this resting period, the yeasts degrade by lysis, giving
the wine its unique traits.
Light pink colour with orange reflections, fine and remarkable perlage. Intense
bouquet with typical spicy notes accompanied by citrus and pink grapefruit hints.
Pleasantly fresh and mineral in the mouth with good roundness and firm persistence,
crowned by the right sensation of foam.
