Alcohol: 14.5%
Soil: Calcareous with clay loam texture. Selective manual harvesting in crates transported by refrigerated wagon, very gentle destemming to leave the grapes completely intact.
Vinification: maceration and fermentation in steel at controlled temperature for about 20 days with periodic submerging of the cap. Two replacements per day with separation of the grape seeds, repeated delestage, soft pressing. After malolactic fermentation in November, ageing takes place in cement vats for at least 6/8 months and then in bottles for a period of not less than 6 months.
Tasting note: the intense, persistent aroma and rich flavour with hints of forest fruits and slight spicy notes make Primitivo the perfect accompaniment for meat dishes, furry game, mature cheeses and hard pasta.
