SPALMAFORTE ALLE OLIVE

It is also known as nduja Pugliese. It is obtained from the belly, the shoulder and the cheek of the pig with the addition of peppers and fresh sweet pepper and olives. Everything is minced and mixed. Then it is put to rest for about 12 hours and then stuffed. Set to dry for 7 days and then to ripen for about other 20 days. It’s characterized by the taste of the peranzana olive.
